Cooking for one usually involves whatever takes the least amount of effort, at least it does for me. Cat's away and I've been living off literally whatever is lying about and eating it straight from the pot it is cooked in (classy, I know...).
Anyhow, this chicken dish is a breeze to put together and packs loads of flavour.
Ingredients
- 1 large chicken breast
- 1 tsp lemongrass
- 1 tsp fish sauce
- 1/2 tsp ginger
- 1/2 tsp sugar
- 2 cloves of garlic
- 1 tbsp Chinese cooking wine
- pinch of salt and pepper
Firstly, slice up the chicken breast anyway you like. I prefer thin slices, about 1cm thick, as they cook quickly and the marinade time is pretty much instant.
Tip
Like other meat, slice the chicken against the grain.
Crush or very finely chop up the lemongrass, ginger and garlic. Mix all the ingredients with the sliced chicken in a bowl and marinate for about half an hour. That's pretty much it, just heat up a frypan on medium/high heat with some oil and cook for about three minutes, flipping once.
This is usually the most I can muster up when I'm just cooking for myself. Am I just lazy, or does anyone else have a problem with summoning the effort to cook a decent meal for one?
