Seafood chowder is a favourite of ours, especially when the weather is cold.
Ingredients
- 300-400g seafood
- 1 onion, chopped
- 2 to 3 potatoes, chopped
- 1 carrot, chopped
- tbsp of butter
- 200ml thickened cream
- 1L shellfish stock (chicken stock is fine)
Start off by sweating the onions in the butter for 5-10 minutes, making sure they don't overly brown. Then add in the potatoes, carrot and the stock. Cook until the potato and carrot are soft, then remove from the heat and purée with a stick blender (you may wish to leave some chunky bits).
Stir in the cream and then put back onto a low heat and simmer. Continue stirring until the cream is well combined. About 5 minutes before serving, stir in the seafood and cook for about 3-4 minutes.
TIP - You can make this soup pretty much in advance. Just make it without adding the seafood and freeze in containers. Then for a quick meal, bring to the boil and add in seafood. The laziest way would be to buy a marinara mix from the supermarket (still tastes good).
