Quick and Easy Pizza



So I know this is cheating. I haven't made my own base, or my own sauce, but this is so quick and easy and it's perfect for a weeknight meal or a lazy weekend lunch.

All the ingredients are bought at the local supermarket and it's just a matter of assembly.

Ingredients:
  • bread for base (Lebanese bread, pita bread, Turkish bread...)
    You can use any flat bread you like, but I find thinner breads work better for a crispy, crunchy bottom with the focus on the toppings. If you prefer more bread to sink your teeth into, then Turkish bread works quite well (sliced in half lengthways) - you get a bit more balance between base and toppings. Depends on what tickles your fancy I guess.
  • tomato sauce (can be pizza specific, doesn't have to be)
  • toppings, some suggestions: fresh tomato, mushroom, fresh basil, spinach, ham, salami, boccocini, grated mozzarella / cheddar / parmesan

Assembly is pretty easy:
  1. Spread sauce over your bread base. (You can add any herbs you like here.. oregano, basil, etc.)
  2. Sprinkle grated cheese on. (I know there are some who prefer the grated cheeses on top, but I find it works better on the bottom..)
  3. Add the rest of your toppings.

You can assemble all your pizzas in advance. Store layered on a flat plate with glad wrap between each layer.



"Cooking"
  1. Heat the pizza in a large frypan over medium heat with the lid on for 5 minutes (or until your cheese melts)
  2. Remove the lid and heat for a further 5 minutes on medium-high heat to crisp the base

Finito!

So there's my cheater's pizza... No dough twirling required and plenty of taste!

    I saw somewhere (on internets) somebody did something similar with a cast iron skillet then transfered to under an oven grill.

    P.S. have you been watching the Heston's latest show? It's called "in the search for perfection". I really liked the episode on burgers, hope he's going to do Pizza at some point:

    Heston is awesome in my books and in season 1, episode 5 of his in search of perfection series, he tackles pizza. He cranks up his oven and uses an iron skillet.

    Way too much effort for Cat and myself... this takes no time at all and is passable for a decent pizza.

    i haven't watched much of heston's perfection series, but i like the way he uses science in his cooking.. appeals to the engineer in me, i guess?
    however, everything he makes take more time and effort than i'm willing to give.. i'll just have to go and eat at his restaurant some day...
